cooking up the impossible

The biggest critics of eating clean will tell you that it is not possible to have both great taste, low on simple carb, high on complex carbs and other vitamins in a single meal.

Well, I had just that meal. For lunch today, I had a chicken tandoori with mixed greens salad seasoned with olive oil and balsamic vinaigrette. Calorie wise, it averages around 400 calories and most of it was good calories (olive oil, yogurt…)

In fact, it was so yummy that I had forgotten to take a picture until I was almost done. So, I assure you that it was definitely more delish than it looked.

Chicken Tandoori

  • 150g of chicken cut into bite sized pieces (can be breast or fillet)
  • 2 tbsps of greek yogurt
  • 1 tbsps of tandoori spice mix (will update brand)
  • half tbsp of lemon juice
  • a pinch of salt
  • a clove of garlic

1. Marinate chicken with the ingredients above for an hour. If you have time on your hand, you can marinate it for up to 4 hours.

2. Panfry in non stick grill pan with a sparing amount of olive oil (1 tbsp = 120 calories) until done.

The alternative is to oven bake it but I find that, frying gives a better taste as well as faster. Also if its done on a non stick pan, the amount of oil used is minimal

    Hi,

    Justine here from bootcamp. Thought I’ll check out yr blog after speaking to you today. =)

    Anyway, just wanted to share something after reading my way through.

    You mentioned my doing 91 burpees in one of yr posts. Thanks haha. But I also wanted to let you know that in Sept 2007, I was 29 y.o and weighing 81 kg, approx 45% BF. I could hardly walk to the bus stop without panting. It took me about a year to lose 20 kg and shed 15% BF,and that is without the help of Genesis. In my first month of weight loss, I could only do brisk walking because I was so unfit. The rest came only much later.

    So I wanted to tell you that all that you want to achieve, is possible. And it is nearer than you think, especially since you did the smartest thing and signed up with Genesis. Before you know it, you’ll be revamping your whole wardrobe (Trust me, I spent thousands of dollars on my new one.)

    Oh, and I find so many similarities in your experiences and mine! The changing food tastes, the cravings (though they come lesser now, but I cheat with the occasional Magnum, haha). And we are both in the same age range, so I can really identify with whatever you are feeling now.

    Lastly, I really think you are doing great. I’ll be following your blog with great interest. I’m sure we’ll soon see a whole new you VERY VERY soon.

    Justine: thanks for coming by with encouragement and sharing your story! so inspirational! You are my burpee idol! I would love to do 91 burpees and not fall over dead. For now, I’ll just aim for a x 5 increment each week.
